There's nothing better than a home-cooked meal. It's been cold and rainy for the past few days so I decided to make a vegan, plant-based, soy chorizo lasagna. I know, you're probably wondering how did it taste. Well, it was a big hit with the meat-eater in the house because he asked for a second serving. Anything made with meat these days can be "veganized" and still be tasty and enjoyable. It also made a nice, fulfilling, lunch too.
