#InTheKitchen Making #Vegetarian Chorizo Empanadas



I decided to get in the kitchen and make some Vegetarian Chorizo Empanadas. I have eaten empanadas before as a dessert and have seen a lot of different ways people prepare them. This Sunday, I wanted to create my own recipe with a vegetarian twist, using soy chorizo and Pillsbury dough.

In this video, I walk you through my process for preparing my Vegetarian Chorizo Empanadas. This is actually my first time so I'm trying something new. I like to be in the kitchen as well. When I was a little girl, I really enjoyed baking so I'm no stranger to the kitchen. I definitely know how to cook! It was required when I was a kid. 

I have also been working on writing a number of short film scripts and thought that I would prepare my dinner earlier and have time to sit down and work on getting  my words formatted into my screenwriting software. I like to use Celtx because everything is included in the process of getting your idea down on paper and then flushed out to go into production and then post-production. Day 5 (Recap) Final Video - Live #BelowTheLine 2013. Temptation. Iron Man 3. Perseverance.



Hello Everyone,

I finally got the opportunity to post my final video for Day 5 of the Live Below The Line Challenge 2013. The challenge actually ended on Friday night, May 3, 2013 and I accomplished my goal of donating $250 to the World Food Program USA to help feed 1,000 children in schools in the poorest of countries. YAY! I feel like I'm on cloud 9! 

This challenge has really taught me even more about sacrifice, discipline, perseverance, and follow-through. It's really not until we all face adversity or have our "AHA" moments, do we see the overall big picture. It makes me grateful to be able to have enough money to buy my food and to eat healthy options right down the street in the grocery stores and local markets.

Day 4 - Live #BelowTheLine 2013 (Video) - Reflection. #Hope. Spiritual Self. #Life.



It's Day 4 of the Live Below The Line Challenge 2013 and I decided to share how I'm feeling in a video today. Late last night, I began to watch the Free documentary on Hulu, right now, called Living On One Dollar. It's still available through this week. If you have the time, take a look at it because it gives a real life account into the lives of families, living everyday in extreme poverty.

As for myself, just knowing that my last day of the challenge is tomorrow, May 3rd, I feel more pressure to get through today. I think this is because I know I'm so close but not actually across that finish line. I had my oatmeal this morning and I will have my lentils for lunch and dinner, but I think the thought of completing this journey carries it's own weight and intensity in my mind. However, I'm still going strong, but in reflection mode, filled with even more hope for change in this area of extreme poverty, spiritually more in tune with people and my environment, and life in general.

Day 3 - Half Way Point in Live #BelowTheLine 2013



I'm at the half way point of the Live Below The Line Challenge for 2013...
When I woke up this morning, I was looking forward to my oatmeal and raisins. Now that it's lunchtime, I'm getting ready to have a bowl of my lentils with onion. I don't know, but today I feel a lot hungrier than usual. I think the challenge is slowly working on my mind. 

On Day 3 of the challenge, it is definitely teaching me even more about self-control and mental discipline because I've ran across some mouth-watering recipes so far on Pinterest and while blogging. However, I know how important this journey is to so many people all over the world and stepping out to live the way they have to live every day is definitely a meaningful challenge for my heart and soul.
